When going gluten-free there are a few staples that one should have in their pantry. Many of these are no brainers, like flour and all the other necessities of baking, but one that I have found to be invaluable has been Xanthan Gum. Because gluten acts as a binding agent in most foods, when it is taken away, foods tend to have very different consistencies. When I was about 13 my family discovered xanthan gum and I have never looked back.
Growing up in a household where my mom was gluten-intolerant prepared me just a little bit for the day I would have to change my own way of eating. We experimented in my house, so when it became necessary for me to switch my diet over, I had some tools at my disposal. I had learned lessons like, "Don't toast rice bread," and, "bean flour is rather bitter," (more on those later) so I wasn't completely miserable having to then cook for myself. When gluten-free becomes a way of life, it is really simple to get a hang of what to keep in the pantry! Switching over can be hard, but in my experience it has been worth it.
Now, I don't want to be a naysayer on anyone's personal preferences, but I eat gluten-free out of necessity. I do not understand the people who choose to do so of their own volition. When I first started eating gluten-free, not many people even knew gluten was an issue for some, so when it became a diet trend, I didn't get it. There have been many studies done and doctors will tell you that eating gluten-free isn't actually a viable weight-loss plan (it's also not that satisfying at times). It changes the nutrients that your body receives and can sometimes cause deficiencies if you are not careful, so I would suggest sticking with a "glutenous" lifestyle if possible!
However! For those who truly want to stick to a gluten-free diet or those who simply want to know more, I hope I can help.
As a lover of pasta, I am very excited that I can find gluten-free pasta of high quality at low prices in stores now. It used to be that each brand had a high price and a different consistency, but there have been advances in knowledge and attention so gluten free foods are becoming more available in stores everywhere.
Because of the Cheerios pictured in this short bite of a video, here is a super simple recipe for some cereal bars that you and your kids will love!
1/2 Cup Honey
3/4 Cup Peanut Butter
3 Cup Cheerios Cereal
Mix together and press into 9x9 brownie pan. Refrigerate for 20-30 minutes. Cut to desired size and enjoy!
I like to store my bars in the freezer, and tuck them into lunches to keep things cool and fresh!
